Ramadan Pide Recipe Ingredients

For the Ramadan Pide Dough:

  • 5 cups of flour
  • 2.5 cups of lukewarm water
  • Half a packet of fresh yeast (or 1 packet of instant yeast)
  • 1.5 teaspoons of salt
  • 1 teaspoon of sugar

For the Sauce:

  • 1 tablespoon of yogurt
  • 1 egg yolk

How to Make Ramadan Pide

  • First, for the dough, crumble the fresh yeast into a suitable bowl, add 1 cup of water and sugar, and stir to dissolve the yeast.
  • Then, in a mixing bowl, combine the flour and salt, and create a well in the center.
  • Add the prepared yeast mixture into the well, then gradually add the remaining water (2.5 cups total) and start kneading the dough with your hands.
  • Since the dough will be soft, wet your hands occasionally as you knead it to help shape the dough.
  • Once the dough is well combined, cover it with plastic wrap and a clean cloth, leaving it to rise for about 40 minutes.
  • After the dough has risen, transfer it to a floured surface and knead again to remove any air.
  • Cut the dough into two equal pieces using a knife and shape them into balls.
  • Place the dough balls on a baking tray lined with parchment paper to prevent sticking.
  • Cover the dough with plastic wrap and let it rise for another 20-25 minutes.

  • Meanwhile, prepare the sauce by mixing yogurt and egg yolk in a bowl and whisking well.
  • Flatten one dough ball with your hands, then spread half of the sauce mixture over it.
  • Using your hands, press down to evenly spread the dough and form it into the shape of a pide, ensuring the center is pressed down well. Try to stretch it thin as the dough will rise while baking.
  • Once stretched, press the edges with your fingertips, then create small lines in the center of the dough. Press down repeatedly in these areas to maintain the shape while baking.
  • Finally, sprinkle sesame seeds on top. You can also skip the sesame if preferred.
  • Shape the dough further with your hands and bake it in a preheated oven at 230°C until the top is golden and crisp.
  • To keep the pide soft, place a heatproof container of water in the oven.
  • Repeat the same steps for the second dough ball and bake until golden.
  • Once baked, place the pides on a wire rack and cover them with a clean cloth to prevent the bottoms from becoming soggy.
