Hello everyone! I'm having vegetarian guests over for dinner and wanted to prepare a menu that is both filling and stylish. While thinking about what to cook, I came up with what I believe is a wonderful menu. I hope it inspires you too. Enjoy in advance!
WHEAT SOUP WITH YOGURT SAUCE
Ingredients

1 teaspoon mustard

1.5 tea glasses boiled wheat

7 spring onions

1.5 tablespoons margarine

7 tablespoons yogurt
-
2 tablespoons flour
-
1 tomato
-
2 cups vegetable stock
-
Salt
-
Dill
-
Dried mint
-
Red pepper flakes
Preparation:
Boil the cooked wheat with vegetable stock. Whisk the yogurt and add it to the pot. Cook over medium heat. Dilute the flour with cold water and slowly add it to the soup, stirring continuously.
BUCKWHEAT MEATBALLS
Ingredients

1 cup boiled buckwheat

1 egg
-
1 cup buckwheat bread crumbs (finely ground)

Half a cup grated and cooked carrot

Salt

Black pepper
For Cooking:

1 beaten egg

1 bowl buckwheat flour

1 bowl breadcrumbs

Breadcrumb coating
Preparation:
Knead all meatball ingredients together and shape into patties. Coat first with flour, then egg, and finally breadcrumbs. Place on a baking tray lined with parchment paper and bake in a preheated oven until golden.
CAULIFLOWER RICE
Ingredients

1 small cauliflower

2 onions

2 cloves garlic

1 teaspoon curry powder

2 tablespoons olive oil

4 walnuts
Preparation:
Grate the cauliflower in a food processor until it resembles bulgur wheat. Sauté in olive oil until lightly golden. Finely chop onions and garlic and add to the pan. Add curry powder and cook over medium heat. Add crushed walnuts during cooking or sprinkle on top before serving.
